This is my favorite cake in the world. This recipe is sugar-free and it does not have any frosting, yet it is THE BEST carrot cake you will ever try. My grandma baked this cake for all of my cousins and I whenever she thought we were to much into a sugar high but still wanted to pamper us with something sweet.

It is super easy to make, it takes about half an hour to prep and 40 minutes to bake.

The first thing you have to do is preheat the oven at 350 degrees.

In a large bowl, beat together the eggs, the Stevia and the lime juice until getting a soft creamy mixture. Add the flour, baking powder, the shredded peeled carrots, cinnamon powder, grated clover, hazelnuts, and mix all together.

Pour into a bake pan previously greased and floured and bake for approximately 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Let cool in the pan for about 10 minutes. Grate some lime shell on top of the cake to garnish and go ahead and serve.
