Tosca, my grandma’s house had a beautiful garden filled with fruit trees, which served as our own little farmer’s market. My cousins and I would grab a basket and run around the garden picking up all the fallen fruits and take them to the kitchen, where Tata (my grandma) would always create the most delicious salad combinations in the neighborhood (not to say in the world!).

In this occasion I will teach you how to make a delicious Avocado and Grapefruit salad with Mango vinaigrette.

This may sound a bit weird BUT peel the mango, slice it, and cook in a pot on medium heat. Add the water, wine vinegar, Stevia (or honey), and the pinch of salt. Turn the stove off when you see the mango is tender. Once it has cooled off a bit, blend it with some of the liquid in which it was all cooked.

Now get one of the grapefruits and cautiously take the pulp out without breaking the shell. Clean the pulp so it does not have any white skin, open up the gores and take out the pulp.

Peel all the avocados and cut them in slices. Now place them carefully on top of the lettuce sheets with the grapefruit pulp.

Place the grapefruit shell in the middle of the salad bowl and pour the mango vinaigrette into it so everyone can add as much or as little vinaigrette as the desire.
